What is hae bee hiam?

Hae bee hiam is a beloved Singaporean and Peranakan condiment made by slow-frying dried shrimp with fresh red chilli until it becomes a fragrant, spicy shrimp floss. Sweet, savoury and quietly fiery — it’s the jar that empties itself.

Popo’s story

Forty years at the same wok.

Popo first learned how to make hae bee hiam by watching her neighbour prepare it when she was young. Over time, she made the recipe her own — and she has been making it for our family for over 40 years.

What exactly is hae bee hiam?

Hae bee hiam (虾米香) is a traditional Singaporean and Peranakan condiment of dried shrimp slow-fried with red chilli until it becomes a fragrant, spicy shrimp floss. “Hae bee” means dried shrimp in Hokkien, and “hiam” means spicy.

How long does it keep?

Because we add no preservatives, refrigerate your jar as soon as it arrives and enjoy it within 1 month of the production date. Always use a clean, dry spoon and keep the lid tightly closed.

How spicy is it?

Pleasantly fiery — it has a proper kick, but the slow frying mellows the chilli so the fragrance and sweetness of the shrimp come through first. Most people find it very hard to stop at one spoonful.

What do I eat it with?

Anything that needs a wake-up call: fried rice, plain porridge, noodles, pasta, eggs, toast, sandwiches, or stir-fried vegetables like long beans and lady’s fingers.

Are there any allergens?

Yes — it contains crustaceans (shrimp). It is made in a home kitchen that may also handle soy, nuts and other allergens.
